Granola is great. If done right, it’s way healthier than most commercially available trail mixes- otherwise known as candy with obstacles.
4 cups old-fashioned rolled oats
1/2 cup brown sugar
1 cup unsweetened shredded coconut
1/2 cup maple syrup
1/4 cup unfiltered apple juice
1 ripe banana
almonds, cashews, pine nuts, raisins, whatever nuts or dried fruit you have on hand
Preheat oven to 300 degrees.
In a blender combine maple syrup, apple juice, and the banana. Blend until smooth. Set aside.
Combine oats, sugar and coconut in a large bowl. Add the banana mixture to the dry ingredients, adding a splash of apple juice if granola is still too dry.
Spread the mixture onto a lined baking sheet and bake for 45 minutes.
Add optional ingredients and stir before baking for an additional 10-15 minutes.
Allow to cool before transwering to an air-tight container.
Serve as a cold breakfast cereal, mixed into yogurt, or with warm milk for a decedant take on ‘oatmeal’.
