Breakfast Hash Cakes with Maple Bacon and Turmeric

Get your brunch on with these yummy hash cakes! They’re loaded with all sorts of delicious root vegetables, seasoned with turmeric, then topped with uncured maple bacon and a farm fresh egg. 1 Cup Carrot (grated)
1 Cup Golden Potato (grated)
1 Cup Sweet Potato (grated)
1 Cup Parsnip (grated)
3-5 Green Onions (thinly sliced)
1 Cup White Cheddar (grated)
1/4 tsp. Salt
1 tsp. Turmeric
Fresh ground black pepper
3 tsp. Flour (or Pamela’s GF flour)
1lb. Uncured bacon ends and pieces
1 Avocado (sliced)
Cooking oil of choice (coconut, butter, vegetable, etc.)
Start cooking your bacon over medium heat stirring occasionally.
Grate all of your veggies with a cheese grater, and place them in a large mixing bowl, but be mindful with the parsnip. Parsnips have a very tough core, which you can remove in one of two ways: 1.) Cut them into lengthwise quarters then cut out the core, or 2.) Use a vegetable peeler to whittle away the usable portion, then discard the core.
Reserve 4 eggs and some of the green onions for garnish.
Add the remaining onions, cheese, spices, flour, and mix all of the ingredients thoroughly.
Heat up 1 tsp. of oil in a medium fry pan over medium heat.
This recipe will make 4 large hash cakes, but you could certainly make smaller ones if you choose. Make patties out of your mixture, then begin cooking the first batch for about 5 minutes, or until thoroughly browned (be sure to leave room in the pan for them to expand when pressed). Flip your hash cakes, press it flat with a spatula, and cook for an additional 5 minutes. Repeat until all your hash cakes are finished.
Plate your hash cakes over some greens and top with bacon, avocado, a fried egg, and green onion.
