1 Cup Carrot (grated)
1 Cup Golden Potato (grated)
1 Cup Sweet Potato (grated)
1 Cup Parsnip (grated)
3-5 Green Onions (thinly sliced)
1 Cup White Cheddar (grated)
5 eggs
1/4 tsp. Salt
1 tsp. Turmeric
Fresh ground black pepper
3 tsp. Flour (or Pamela’s GF flour)
1lb. Uncured bacon ends and pieces
1 Avocado (sliced)
Cooking oil of choice (coconut, butter, vegetable, etc.)

Start cooking your bacon over medium heat stirring occasionally.

IMG_1963Grate all of your veggies with a cheese grater, and place them in a large mixing bowl, but be mindful with the parsnip.  Parsnips have a very tough core, which you can remove in one of two ways:  1.) Cut them into lengthwise quarters then cut out the core, or 2.) Use a vegetable peeler to whittle away the usable portion, then discard the core.

Reserve 4 eggs and some of the green onions for garnish.

Add the remaining onions, cheese, spices, flour, and mix all of the ingredients thoroughly.

Heat up 1 tsp. of oil in a medium fry pan over medium heat.

This recipe will make 4 large hash cakes, but you could certainly make smaller ones if you choose.  Make patties out of your mixture, then begin cooking the first batch for about 5 minutes, or until thoroughly browned (be sure to leave room in the pan for them to expand when pressed).  Flip your hash cakes, press it flat with a spatula, and cook for an additional 5 minutes.  Repeat until all your hash cakes are finished.

Plate your hash cakes over some greens and top with bacon, avocado, a fried egg, and green onion.
