Chicken Salad

This is a lighter take on Waldorf Chicken salad, but with the amazing mix of textures and flavors you don’t miss the mayo. The chicken salad is pretty versatile- you can serve it by itself and enjoy it with nothing but a fork, but it also makes great lettuce wraps, or an awesome sandwich on a fresh ciabbata roll.

1 pound cooked chicken breast, cubed into bite-sized pieces (start with a rotisserie chicken to make this a super-quick meal to prepare)
1/2 cup red onion, diced
1/3 cup celery, sliced
1/2 cup apple, diced
2/3 cup grapes, halved
1/3 cup dried cranberries
1/4 cup sliced almonds
1/2 cup plain Greek yogurt
1 tablespoon freshly squeezed lemon juice
1/2 tsp garlic powder
Kosher salt and freshly ground black pepper

In a large bowl, combine all ingredients- chicken, red onion, apple, grapes, dried cranberries or currants, sliced almonds, Greek yogurt, lemon juice, garlic powder, and salt and pepper, to taste.
