Chocolate Peanut Butter Bites

These Chocolate Peanut Butter Bites are good as a treat or a shot of energy during a long workout. They’re quick to make and keep well in the fridge. Remember though, all good things in moderation!
Ingredients:
1/2 cup creamy peanut butter (no sugar added)
1/4 cup honey
1 tsp vanilla extract
3 tbsp unsweetened cocoa powder
1 cup old fashioned oats (raw)
3/4 cup shredded coconut (If you want a little more sweetness go with sweetened coconut)
1/2 cup flaxseed meal
6 tbsp semi-sweet chocolate chips
Up to 4 tsp warm water, as needed
Directions:
In a medium bowl, stir together peaut butter, honey, vanilla and cocoa powder. If the mixture is very difficult to stir add in 2 tsp warm water.
Add oats, coconut, flaxseed meal and chocolate chips and stir until well mixed.
If the mixture doesn’t stick well, stir in up to 2 tsp more water as needed. Refrigerate the mixture chill until nearly set and easier to handle. Remove from refrigerator and shape into 1-inch balls.
Store in the refrigerator in an airtight container for up to 1 week (though they probably won’t be around that long!).
