A party favorite, guacamole is filled with delicious ingredients- avocado, tomato, jalapeño, onion, lime juice.
In this ‘deconstructed’ guacamole, we leave the masher in the drawer, even out the ratio of tomato to avocado, and add beans for their protein, changing it from a snack to a substantial side dish. Even though avocados are full of ‘good fats’- the monounsaturated kind- as in anything though, moderation is key.
2 vine-ripe tomatoes, diced
1 (15-ounce) can black beans, rinsed and drained
1/2 cup small diced red onion
1 tbsp jalapeno peppers, minced
1/2 teaspoon freshly grated lime zest
juice of 1 lime
2 tbsp good olive oil
kosher salt and black pepper to taste
1/4 teaspoon ground cayenne pepper or 1 tbsp fresh cilantro, chopped (if desired)
2 ripe Hass avocados, seeded, peeled, and 1/2-inch diced
Mix all ingredients except the avocados together in a medium bowl. Immediately before serving, fold in the avocado, check seasoning, and serve.
