Dijon Salmon

It might be hot to cook, but the nice thing about fish is that you don’t need to have the oven on for long!

Dijon Salmon

Ingredients:

2- 6oz salmon filets
2 large garlic cloves, minced
2 tbsp capers
1/2 tbsp Dijon mustard
1/2 tsp salt
1/8 tsp ground black pepper
2 tbsp olive oil
2 tbsp of fresh lemon juice

Directions:
Line a rimmed baking sheet with foil. (You will appreciate this when cleaning up.)
In a small bowl, mix together all ingredients but salmon.
Generously brush all sides of salmon with sauce and if you’re feeling fancy top with fresh slices of lemon.
Bake at 450°F for 12-15 min or until just cooked through.

Serve with a simple salad (mine had grilled peaches with a lemon/olive oil green onion dressing).
