Grown-Up Carrot Salad

Carrot Raisin salad was one of my favorites as a kid. But with a dressing of mayo, milk, and sugar, it’s best left as an occasional treat. This grown up version replaces the mayo-based dressing with fruit juice, olive oil and honey and pairs great with spicy tropical flavors like jerk chicken or fish.


6 carrots, peeled then shredded or peeled into ribbons with a vegetable peeler
2 tbsp white raisins
2 tbsp dried mango, apricot, or peach (or an extra tbsp of raisins)
2 tbsp chopped walnuts

2 tbsp fresh lemon juice
2 tbsp orange juice
2 tbsp olive oil
1 tbsp honey

Combine salad ingredients and drizzle with dressing.
