Homemade Honey Maple Chia Pudding: start your day right.

Today I’m going to share with you my recipe for Honey Maple Chia Pudding. Start your day right with this nutritional colossus. Chia pudding is a great, nutrient dense breakfast to start your day with, AND it’s a powerful addition to any smoothie! For this recipe we use coconut milk to reconstitute chia seeds, and there are a couple things to keep in mind. First, when choosing your coconut milk, you want to make sure there aren’t any thickeners in the ingredient list (guar gum and xantham gum are common). You should be able to hear the coconut milk shake in the can. Check out the health benefits of coconut milk here. Second, I would recommend buying chia seeds in bulk either online or at Costco. Okay, so here’s what you need:
1 Can Unsweetened Coconut Milk (Full fat or reduced)
1/4 Cup Chia Seeds (heeped)
1/2 tsp Vanilla Extract
1/4 tsp Ground Cinnamon
2 Tbs Pure Maple Syrup
2 Tbs Honey (heated to a liquid state)
And here’s what to do:
1.) Combine all of the ingredients, EXCEPT for the chia seeds, in a large bowl.
2.) Use either a whisk or electric mixer to thoroughly blend these ingredients.
3.) Add the chia seeds to the mixture, stir in until mixed well.
4.) At this point, you can transfer your chia pudding to a storage container and allow it to sit in the refrigerator overnight (it will be ready by morning).
5.) Enjoy! Chia pudding is pretty tasty by itself, but it really shines when topped with some fresh berries.
6.) Lastly, you can also turn this recipe into a dessert by placing your chia pudding in a blender with the following ingredients:
1/4 Cup Cacao Powder
1/4 tsp Sea Salt
and maybe a little more honey
