This chicken tikka masala-inspired stew is quick to make from simple ingredients you probably already have in your kitchen. It takes some time to marinate, but it isn’t labor-intensive.
1 lb chicken, diced into 1 inch cubes
½ cup tomato sauce
½ cup greek yogurt
1-2 tbsp curry powder
½ cup onions, sliced
½ tsp salt
½ tsp pepper
2 green chilies, diced small
Combine all ingredients in an oven-proof dish and marinate, refrigerated for one hour.
Heat oven to 375 degrees. Cover the dish with aluminum foil and bake for 1 hour, ensuring chicken is cooked through.
Garnish with cilantro (if that’s your thing!) and serve over rice, or as a stew with naan.
