Sausage and Peppers

Quick, easy, flavorful- that’s the great thing about the summer, food doesn’t have to be complicated to be delicious.  There’s such an abundance of fresh fruit and veg coming into season that you don’t have to fancy things up with a lot of spices or sauces.  Simple can be delicious.


3-4 sausages of your choice (I’m partial to hot Italian, myself)
1 red pepper, cut into strips
1 green pepper, cut into strips
1/2 white onion, cut into strips
1 tbsp olive oil
salt and pepper

For this recipe I love to use a cast iron grill pan- you get to sear your meats and let some of the fat drain off while you’re cooking. You can use any oven-proof pan for this recipe though.
Preheat the oven to 375.
Heat your cast iron pan on the stove over medium-high heat. When the pan is HOT add your sausage. Cook for about 4 minutes on each side.
While your sausage is cooking, toss your peppers and onion with olive oil, salt and pepper. Add your veggies to the cast iron pan and put in the oven to roast for about 20 minutes.
Be careful removing your pan from the oven, it will be extremely hot! Remove the sausage and peppers from the pan with a wooden or silicone spoon (metal can cause damage to the pan and dumping everything into a bowl will add the fat that drained off back into your meal.)

Serve by itself, or stuffed into pita bread if you need the carbs.

4 sausages should make 4 servings.
