Summer Peas

One of the veggies in season right now are snow and sugar snap peas. I’m happy to eat them straight out of the garden so they rarely make it to my table, but despite that, I thought I’d share a super simple recipe to make them even better.
Ingredients:
½ lb sugar snap or snow peas
2 tbsp olive oil
2 green onions, chopped
1 tbsp fresh mint, roughly chopped (the finer the chop, the more ‘minty’ it’ll taste)
salt and pepper to taste
You ready for the directions?
Directions:
Stir fry the first 3 ingredients for about 4 minutes.
Remove from heat and stir in the mint, salt, and pepper.
That’s it!
You can either enjoy this hot or let it cool to room temperature. Either way it’s a bright, springtime dish that goes with just about anything.
